I've been in a bit of a coconut obsessed phase lately. I've been adding shredded coconut to just about everything from baking to yogurt to pancakes. I just love the flavour and texture it adds to different recipes.
I realized I didn't have a good coconut cookie recipe. I looked online for inspiration, but couldn't find anything that seemed right. This is how I ended up having my own recipe to share with you today!
One of the best things about this recipe is it doesn't contain any eggs, which means you can EAT THE DOUGH (which let's be honest here: it's the BEST part of baking). The ingredients are simple, and the recipe takes less than 10 mins to put together! What else can you ask for!
